To make the soup, you’ll need: 1 tbsp olive oil, 25g butter, 700g onions (about 5 medium onions), thinly sliced in rings, 3 garlic cloves, finely diced, 1.2 litres vegetable stock, 2 tbsp apple cider vinegar, sea salt, and black pepper. - Pour in the stock and vinegar and stir in well, scrape the bottom of the pan to incorporate the caramelised onions. Bring to a simmer, then turn down the heat and leave for 1 hour. Season before pouring into bowls.
